    破酥包子/好久不见
    传说是这样的,包子因为面皮做得特别酥,陷料又调得特别香,所以小孩子吃了一只,便手舞足蹈起来——竟然会这样高兴,另一只包子不幸因此坠地,摔烂了——因为皮
    太酥,拾都没有办法拾。因此,昆明的这种由云腿调和蜂蜜与菌子的肉馒头得名破酥包子。
    这样叙述,到觉得破酥包子与广味的叉烧包有几分相像,区别就在于包子皮儿上。说起来,面食点心想要做得好,还真是一件困难的事情。既要保持麦子的香,独立于陷料
    之外,又要拒绝面粉未熟似的生涩气,在一掀笼屉的瞬间,烟雾大漫,水汽蒸腾之下一只只精巧的包子破雾而出,传来麦子成熟的诱人气息,和若隐若现的陷料香。这是带
    有一股喜庆的意思了。
    我在昆明的时候,可惜没有吃过正宗的破酥包子—有什么办法,传承于民间草根的经典点心,现在只有国宾级宾馆或者五星饭店才能吃到,为了一只包子不惜耗费一个打工
    族几十分之一的薪水未免太不现实。但今天还是偶然想到破酥包子和大街小巷的点心店里红字落沓沓的旧招牌,几乎任何一家标榜自己是昆明传统老店的铺子都要卖上几种
    不同口味的破酥包子才够得上称为老店似的。
    只可惜,我们的味蕾已经不能像庆祝丰收一样去认真地品尝一只破酥包子,难怪破酥包子要跑到大酒店的中餐厅来卖,花了重金似同割肉,你还能不认真尝尝?
